grilled turkey, pear and smoked gouda sandwichHappy Wednesday to you!  I hope that those residing up here in the great, white north, had a great Thanksgiving this past weekend.  We had beautiful, warm, sunny weather where we live.

With this past Monday being a holiday, it seems the rest of this week is flying by quickly!  So, here is the third and final fall recipe.  If you still have some left-over turkey in your fridge, this recipe might be a great one for you to try!  The combination of the ingredients makes for a perfect fall lunch or light dinner.grilled turkey, pear and smoked gouda sandwichgrilled turkey, pear and smoked gouda sandwich

What you will need per sandwich:

  • 2 slices of white French bread, sliced about 3/4″ thick
  • 3/4 cup cooked turkey (or chicken) breast
  • 3-4 thin slices of pear
  • 2-3 smoked gouda cheese slices
  • small handful of arugala
  • 1 tbsp. mayonnaise
  • 1 tbsp. cranberry sauce or spread
  • butter

In a little bowl, mix the mayonnaise with the cranberry sauce and set aside.  Melt a little butter in a skillet and reheat the cooked turkey, sprinkling it with a little salt and pepper.  Remove the reheated turkey from skillet, cover it and set aside.

Place skillet on medium heat.  Butter both slices of bread and place one,  buttered side down, in skillet.  Carefully spread a tbsp. of the mayo mixture on the top of the slice in skillet and layer it with turkey, pear and cheese.  Meanwhile, spread the remaining slice with the mayonnaise mixture.  Place the arugala on cheese and top with the remaining slice, buttered side up.  Using a spatula, carefully flip the sandwich.  This may be done a few times, until both sides are golden brown and the cheese is melted.  Cut into halves and serve immediately.
