My plan for dinner tonight was to prepare plain, old spaghetti with tomato and meat sauce – an easy fix for our usual busy Wednesday afternoons. Ava and Isabella leave for their regular piano lessons after school which means we are usually hustling and on the road. However, as I scrolled down my pinterest feed this morning, a picture of a savoury and delicious pasta recipe caught my eye – one pot lasagna soup. I figured I could prepare most of the dish in the morning and reheat it just before dinnertime.
Even though the list of ingredients seemed lengthy, it contained items which you typically have in your pantry or fridge. Zara and I did a quick run to the grocery store to pick up a few missing things.
With the recipe calling for many flavourful ingredients such as garlic, onions and herbs, it seemed this would be the perfect comfort food for a chilly day.
This is one of those “dump-it-all-in-one-pot” kind of dishes, which creates a delicious aroma as it simmers on the stove.
Mmm… this delightful, zesty, cheesy bowl of deliciousness was a real hit. I will definitely be making this again.
